It’s a cold, rainy September day. Summer seems long ago, and I am beginning to feel that urge that I get every autumn...the urge to burn a pumpkin spice candle and “nest”.
I steep my Good Earth Tea, throw on my Nana-knitted much-lucks and begin going over my To Do list.
Then anxiety sets in.
- bake several loaves of pumpkin and banana bread to freeze
- clean out closets
- re-organize office files
- tackle photo project
- weed rain garden
- rotate kid’s seasonal clothes
- take sewing class
- etc., etc., etc....
This is but a fraction of my list, and it’s growing by the minute. I can’t seem to get a thing done these days (particularly since discovering Pintrest).
Some may say I should go easy on my self.
I say I could use some caffeine...
So here is a little treat Steph and I came up with to help us over-achievers get through our daily 3:00 pm crash AND our crazy To Do lists.
(We’re HopeFULL it’ll help.)
Expresso-Self!
¾ cup chilled coffee (decaf if desired)
¾ cup ripe banana (about 2 small)
2 Tbsp honey
½ cup vanilla almond milk
Add all ingredients to a blender and blend until completely smooth, scraping down the sides if necessary. Pour into HopeFULL tray, add wooden spoon-sticks and freeze for three hours.
Remove from tray, consume one or two then tackle those chores like the Wonder Woman (or Super Man) that you are!
